Domaine Chanson, a historic Burgundy estate dating to 1750, is now owned by Champagne Bollinger, who have made considerable investment in the winery and vineyards. Perhaps unsurprisingly then this is a gorgeous offering. It’s a classic Chablis that sings with pear and green apple aromas and has a delicious minerality.
